Despite being a traditional staple in cuisines across the globe, offal remains underrepresented in today's food scene. However, with society looking for more sustainable answers to food consumption, could offal be the answer? Lew explores this idea while working his way through five uncovered London gems, discovering the best organs and offcuts that the city has to offer. He faces dishes serving everything from kidneys to heart, to testicles. In order of appearance, the restaurants featured are: St John Bread and Wine, Spitalfields / Mac & Wild, Fitzrovia / Iberia, Caledonian Road / Tongue N’ Cheek, Camden Market / Testi, Stoke Newington.
